Job description: To order, prepare, and serve ample, varied, and well-balanced meals and food to all personnel at facility (typically up to 30 persons at a time). Handles all ordering, stocking, storing, and organization of stores, including food products, beverages, consumables, and cleaning products. Prepares three meals daily with several serving offerings at each meal, including, as appropriate, a variety of deserts, a soup, and a salad. Also provides snacks and beverages as well as materials for sandwich materials for those who need to eat outside of suggested meal times. Keeps the galley orderly and clean.

Applicants must have Sous Chef or Head Chef experience. Line Cooks with experience at a wide variety of stations may be considered.
Skills: Preparing each Sunday a varied weekly meal plan for the following week that includes breakfast, lunch, and dinner, in addition to snacks, fresh fruit, and beverages, with an emphasis on nutrition and health.

· Ordering stores each Monday morning.

· Receiving stores on Thursdays, carefully checking the order for accuracy, completeness, and freshness.

· Putting away stores in an orderly neat fashion. Cleaning out old provisions and rotating inventory.

· Constantly operating with a mindset towards neatness, picking up anything out-of-place. Keeping galley clean by adhering to state and local sanitation, storage, and refrigeration requirements and codes; cleaning equipment.

· Preparing ample, complete, well-balanced meals (breakfast, lunch, and dinner) that offer variety, several selections, and appropriate cooked-to-order items, such as eggs. Includes all prep work, including slicing, cutting, chopping, mincing, stirring, whipping, and mixing ingredients; adding seasonings; verifying taste. Completing meal preparation includes grilling, sautéing, roasting, frying, and broiling ingredients; verifying doneness and taste; assembling and refrigerating cold ingredients.

· Standing by in the galley during mealtime to prepare cooked-to-order items, including steaks, burgers, eggs, pancakes, etc.

· Cleaning all cookware and utensils. With limited assistance of other personnel, ensuring all of the steam table pans, serving dishes, utensils, and plates are thoroughly washed and put away.

· Loading and unloading stores, baggage, equipment, and supplies

· Reporting to engineers, maintenance personnel, and management any maintenance or equipment issues and assisting them with basic maintenance in the galley. This includes having a familiarity and working knowledge of all equipment.

· Maintaining professional, cooperative, and service-oriented attitude and a cheerful demeanor at all times

· Accomplishes organization goals by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.
